Salmon Tartar Over Mixed Salad pint large

Salmon tartar over mixed salad recipe with parsley pesto! This salmon tartar and mixed salad makes for a wonderful quick lunch or a delicious starter if you have guests!

There are so many recipes for salmon tartar out there and I like them all. For this dish, since I chose to serve the tartar with salad and I like my salad dressing spicy, I opted for not spicing my tartar too much, I wanted to feel the taste of raw salmon rather than of spices, I compensated by adding a spoonful of parsley pesto.

Also, since there was vinegar in my salad dressing, I did not add lemon juice to the tartar, only lemon zest. Do note that lemon juice will cook the salmon, so if you want to add some, do it just before serving.

Parsley pesto can be made ahead and stored into a lidded jar in your fridge, it is delicious over any dish, parsley is full of vitamin C and you can almost feel the energy it will give you.

Salmon tartar is always cut by hand, I bought a skinned salmon loin and cut it myself with my sharpest knife.

Recipe :

Ingredients:

Salmon:

21.16 oz. (600 g.) skinned salmon loin, diced

salt and pepper to taste

1 tbsp. olive oil

Zest of 1 green lime

1 tbsp. Dijon mustard

Parsley Pesto:

1 bouquet of parsley, stemmed

salt and pepper to taste

A pinch of Cayenne

1/4 cup of olive oil

Salad:

1 lettuce

1 radicchio salad (red leaves)

3 radishes, sliced

2 Paris mushrooms, sliced

A few cherry tomatoes, halved

1 tsp chopped chives

1 1/2 tbsp. red wine vinegar

5 tbsp. olive oil

1 tsp Dijon mustard

Salt and pepper to taste

Make the salmon tartar:

Add all the ingredients into a small bowl, toss, taste and adjust seasoning, cover with plastic wrap and chill

Make parsley pesto:

Add all the ingredients into the bowl of a food processor and process finely, taste and adjust seasoning, the pesto must be covered by a thin layer of oil, pour into a lidded jar and store in your fridge for later use

Make the salad:

Into a salad bowl, add the vinegar, mustard, salt and pepper, stir well, add the oil and stir again

Add all the vegetables and toss, if you find that the salad is too spicy, you can add 1tbsp. heavy cream

Assembly:

Into a circle, add some salmon tartar, count about 3.5 oz. per party (100 g)

Arrange the mixed salad around tartar

Sprinkle some chives onto the salad

Drizzle some parsley pesto over the salmon tartar
