Deliciously refreshing homemade frozen melon and raspberry pops!

To make your own popsicles is quick and very easy, you only need a little water, some sugar and good fruits.

Besides, homemade popsicles made with fresh fruits taste so much better than the store-bought ones that are generally made out of syrup or concentrate …

Recipe :

Ingredients:

Sugar syrup:

1/2 cup + 2 tbsp. (124 g) granulated white sugar

2/3 cup (150 g) water

Juice of 1 or 2 lemons according to taste

Melon puree:

16 oz. (450 grams) of fresh melon

Raspberry Puree:

1/2 cup (110 g)

Make the syrup:

Place the sugar and water in a small saucepan and bring to boil. Let the mixture boil for one more minute. Remove from heat and let cool.

Add the lemon juice to the syrup

Puree the fruits:

Next, puree the melon into a food processor or blender and pour into a jug

Next, puree the raspberries, strain them to remove the seeds and pour into a jug

Distribute the syrup proportionally into the two jugs, also according to tartness of the raspberries, stir well

Assembly:

Fill up your molds as per the number of layers you want to achieve, freeze completely (about 1 hour 30) before adding a new layer

Do not fill molds up to the brim because the liquid will expand a little while freezing

Note:

If your fruits are sweet enough, you can easily reduce the sugar input (or replace it by stevia), do know though that adding sugar will enhance the taste of your fruit popsicles and give them a softer texture, whereas adding less or no sugar will give sort of an « ice cuby » texture to your sorbets.
