Delicious and crumbly, chocolate chips shortbread cookies are the perfect match to an earl grey cup of tea, one of my favorite teas.
This is a very easy and versatile recipe, you can make this shortbread with nuts, raisins or all sorts of goodies instead of chocolate chips, just follow your imagination.
The best advice I will give you for this very simple recipe: since there is so few ingredients in this cookie, choose the best quality butter you can afford. You can choose salted or unsalted butter; I prefer unsalted because I like to control my salt input.
Also, if you can, please choose pure vanilla extract, it tastes so much better than the chemical thing...
