Mini salmon skewers asian cuisine style for appetizers, these mini salmon skewers are served with a hot and spicy mayo, flavorful and delicious!
This is a quick and easy recipe; the only delicate part is when you fry the salmon as it must not be overcooked. You can serve these mini skewers lukewarm or even cold.
With regards to the ingredients, I am giving you the quantities for 6 servings, counting 4 or 5 mini skewers per person. However, I find that this is quite a filling appetizer, specially if it is followed by a complete meal, therefore I would advise to halve the ingredients and plan to also serve a few lighter appetizers.
Served with a hot and spicy mayo, these mini salmon skewers are awesome!
21.16 oz. (600 g.) Salmon fillet
2 eggs
2/3 cup (15 cl) milk
1/4 cup (40 g.) all-purpose flour
1/4 cup (40 g.) breadcrumbs
1 tbsp. rice vinegar
1 tbsp. soy sauce
Some frying oil
Sauce:
6 tbsp. mayo
1 tbsp. soy sauce
1 tbsp. Sriracha Sauce or Sweet Thai Chili Sauce
2 tsp. chopped chives
A few fancy mini skewers or toothpicks
Rinse and pat dry the salmon fillets, cut it in cubes of about 1 inch
Into a small bowl, add the eggs, vinegar, soy sauce, milk and flour, mix well
Into another bowl, add the breadcrumbs
Heat up the frying bath, dip the salmon cubes into the batter, then into the breadcrumbs and fry 4 or 5 cubes at a time into the hot oil, as soon as the cubes are lightly golden on all sides, remove them onto a paper towel, immediately insert a mini skewer or toothpick into each salmon cube
Quickly mix all ingredients, taste and adjust the spices if needed
Salmon can be replaced by cod or hake, if desired.
