Chocolate and Peanut Butter Marbled Muffins

Delicious chocolate and peanut butter marbled muffins, as per Averie Sunshine recipes.

Here I wanted to make some of Averie Sunshine’s delicious muffins but couldn’t decide between chocolate and peanut butter, so I decided to mix the two recipes and marble my muffins.

Since I made the recipes as written on Averie’s website (didn’t add coffee in the chocolate muffin or jam in the peanut butter one though), just halved the ingredients so as to get 12 muffins, I’m only going to give you the links to the recipes and the list of ingredients for 12 muffins.

Recipe :

Ingredients:

Chocolate muffin:

3/4 cup + 2 tbsp. (114 grams) all-purpose flour

1/2 cup + 2 tbsp. (132 grams) brown sugar

1/3 cup + 1 tsp (35 grams) unsweetened cocoa

1/2 teaspoons baking powder

1/2 teaspoon baking soda

A pinch of salt

1/3 cup + 1 tbsp. (90 ml) buttermilk

1 egg

3 tbsp. + 1 tsp (35 ml) canola oil

1 tsp pure vanilla extract

Peanut butter muffin:

3/4 cups (100 grams) all-purpose flour

1/4 cup (56 grams) granulated white sugar

1/4 cup (42 grams) light brown sugar

1/2 tsp baking soda

1/2 tsp baking powder

A pinch of salt

1 egg

1/4 cup (60 ml) buttermilk

1/4 cup (60 ml) milk

heaping 1/4 cup (80 g.) peanut butter

3 tbsp. + 1 tsp (35 ml) canola oil

1 tsp pure vanilla extract

Instructions:

Make muffins according to Averie’s instructions, when the two batters are ready, fill each cup with a spoonful of each batter simultaneously, up to almost the top, then scroll a toothpick around into the batters to marble muffins.

Note:

Really, the only important thing to know about making muffins: once you have added your dry ingredients to the wet, mix them delicately with a spatula, just until well incorporated. The secret to soft muffins is to not overmix.

Once you have found a recipe you are comfortable with, just use your imagination to bake endless combinations of delicious muffins.
