Candied fruit quick bread is light and fruity, with mixed flavors in each bite, delicious!
Lately, I have been visiting a Russian fair with my girlfriend Monica, and among the exhibits there was this stand offering so many beautiful and meaty candied fruits of the best quality. I had to buy some, but what to do with it…
Then, I remembered fond memories of my grandma’s rich mincemeat bread, or English cake as we used to call it. Grandma would always serve mincemeat bread with a good cup of tea whenever we visited.
So today, I made this “English cake” with candied chunks of papaya, pear, strawberries, cranberries, raisins and candied cherries. It is a boozy kind of cake with the addition of Rum, so good!
It is not always easy to find a large selection of candied fruit, make this cake with the fruits you can easily find, play with the ingredient quantities and add more raisins, you can also add almonds or nuts.

2/3 cups (150 g) powdered sugar
2/3 cups (150 g) butter very soft
3 eggs (1 whole + 2 yolks et 2 whites)
1 and 2/3 cups (200 g) flour (set aside about 1 tbsp.)
¼ tsp salt
2 tsp baking powder
1 cup (150 g) finely minced dehydrated fruit
½ cup (100 g) raisins
15 candied cherries split in halves
¼ cup (50 ml) rum
1 tbsp orange or lemon zest
Pre-heat your oven at 390°F/200°C
Finely chop / mince the biggest chunks of fruit
In a small bowl, mix together the fruit, raisins and zests (except the candied cherries), add a tbsp. of flour, toss and set aside
In a bigger bowl, with a hand mixer, whisk the butter and sugar until soft and creamy
Add the whole egg and two egg yolks, whisk several minutes until mixture becomes thick and pale yellow. It must double the volume
Add the rum, whisk quickly
In a smaller bowl, whisk together the flour, salt and baking powder. Sift about half the mixture into the egg mixture and incorporate with a spatula. Repeat the operation with the rest of the flour
Add salt to the egg whites and whisk until soft peaks, incorporate delicately into the egg mixture with a spatula
Add all the fruits, raisins and cherries, and mix delicately with a spatula
Butter and flour your bread mold, you can use a spray, pour the batter and even the surface
Into the oven for about 45 to 50 minutes, a toothpick inserted in the center must come out clean
This bread tends to blacken quickly, after about 25 minutes, check your bread and, if needed, cover it loosely with a piece of aluminum foil
