Fennel salad recipe, fennel salad helps digestion and soothes stomach aches. Fennel is very well known for its digestive properties, refreshing and delicious, as well as a healthy and low calories side dish!
2 fennels
10 radishes (thinly sliced)
A small tin of corn kernels
2 grated carrots
Salad dressing
1tbsp mustard
1 tsp soy sauce
1 tsp curry powder
1 1/2 tbsp red wine vinegar
6 tbsp olive oil
1 tbsp chives
Salt and pepper to taste
Cut fennels vertically in four quarters, cut away the stems (I like to freeze the light green herbs hidden in the stems, then I use them to flavor my fish or seafood dishes), remove the core
With a mandolin or a sharp knife, mince thinly the fennels holding them vertically
Into a salad bowl, add minced fennels, radishes, corn kernels and grated carrots
Into a salad bowl, add mustard, soy sauce, curry powder and red wine vinegar, stir until well blended
Add olive oil and chives stir
Add salt and pepper to taste
If you find that there is too much vinegar, you can add a tbsp. of cream or mayo
Pour the salad dressing onto vegetables and toss
Taste and adjust spices if necessary
You can store this salad in your fridge for two days
About the salad dressing: this is the recipe of a basic French salad dressing, except for the curry powder. With a green leaves salad, the ratio oil/vinegar, would be 1 tbsp. vinegar/3 tbsp. oil
