Savory pancake topped with mixed veggies, sautéed peppers, lettuce and bacon, delicious!

This is a quick and easy recipe that you can make all year round with the vegetables you have on hand.

The pancake is large, slightly crispy, there’s different textures and flavors, delicious!

Here I topped my pancake with fresh red bell peppers, a mix of frozen green peas and beans, a few lettuce leaves and bacon strips.

If you're going to double the recipe, make 2 pancakes.

Recipe :

Ingredients:

Pancake:

3 eggs at room temperature

2/3 cup (150 ml) milk

2/3 cup (90 g.) all-purpose flour

Paprika, salt and pepper to taste

1 tbsp. dry basil

1 tbsp. olive oil

1/3 cup (45 g.) grated cheese

Vegetables:

3 red bell peppers, cut into strips

About 1 cup of frozen blanched green peas and green beans (optional)

3 garlic cloves, chopped

1 tbsp. of dry basil

A pinch of Cayenne

Salt and pepper to taste

1/3 cup of bacon strips, fried

Some olive oil

1 lettuce, shredded

Sautéed the veggies:

Into a large skillet, heat some olive oil on medium high heat, add the bell peppers strips, basil and chopped garlic, season with Cayenne, salt and pepper to taste, saureed until the bell peppers are starting to wilt, stirring occasionally

Add the frozen peas and beans and cook for another 5 minutes, set aside

Make the pancake:

Pre-heat your oven to 450°F (230°C) and heat skillet into the oven

Into a small bowl, whisk together the eggs and milk

Into a medium bowl, combine together the flour, herbs and spices

Add the egg mixture to the flour mixture and whisk until combined

Add the olive oil and grated cheese, mix with a spatula

Add some butter to the skillet and swirl to distribute, pour the pancake batter and bake for about 15 minutes

Remove from oven and let rest for about 3 to 5 minutes

Assembly:

Distribute the veggies evenly on top of pancake, then the shredded lettuce

Drizzle some olive oil on the lettuce and add the bacon strips

Note:

I always store bags of blanched or uncooked frozen vegetables from the store in my freezer. Frozen vegetables are often fresher than the fresh vegetables you can buy. I tend to add a cup or two of frozen veggies to my fresh ones, that helps with the 5 vegs and fruit a day… and they come in very handy when you are in a hurry.

I never thought about making a "savory" pancake! And baking it makes it so much easier! I just need to get a good cast iron skillet to pop in the oven!
