How to make tartare sauce, this traditional homemade tartare sauce recipe is easy to make, delicious with hot or cold fish, meat, potatoes, as a dip for any veggies, excellent with fish or meat burgers!
Tartar sauce is made with mayo, whether homemade or store bought, pickles, tarragon and shallots. Tarragon can be replaced by dill, capers are a delicious addition too.
For this recipe I made my mayo from scratch but store bought mayos are so handy.
Mayo:
1 egg yolk
2 tbsp. Dijon mustard
1 1/4 cup Vegetable oil
1 tsp red vinegar (can be replaced by 1 tsp lemon juice)
Salt and pepper to taste
Garnish:
8 pickles, finely chopped
1 shallot, finely chopped
1 tbsp. chopped chive
1 tbsp. chopped tarragon
Utensils: 1 small bowl with a round bottom
Lay a wet cloth under your bowl so as to stabilize it
Into the bowl, add mustard and egg yolk, whisk until well incorporated, as soon as incorporated, start to drizzle oil, continuing whisking until no more oil
Add the vinegar or lemon juice, salt and pepper to taste, whisk to incorporate
Add the pickles, shallot, chive and tarragon, incorporate with a spatula
Taste and adjust seasoning if necessary
