Italian sausage meatballs salad, fresh and delicious!
I like these Italian sausages so much, they are spicy and flavorful, they can be added in various dishes where they become the star ingredient.
For this recipe, I removed the meat from the sausage casings, formed small meatballs and quickly seared them, served them on top of a mixed salad.
Love this recipe for a quick lunch or dinner, healthy, fresh and light...
19 oz. (540 g.) Italian sausages
3 tbsp. flour
Pepper to taste
1 tbsp. olive oil
1 Lettuce or more as needed
4 oz. (150g.), green beans, cooked
1 cucumber, peeled and sliced
A few Cherry tomatoes, halved
1 tsp chopped chives
1 tbsp. red wine vinegar
4 tbsp. Olive oil
1 tsp Dijon mustard
Salt and pepper to taste
Remove the meat from the sausage casings, form 4 meatballs out of 1 sausage
Into a shallow bowl, add the flour, sprinkle it with pepper to taste and whisk briefly, roll meatballs into this mixture, coat well
Into a frying pan/skillet, heat some olive oil on medium high heat, sear meatballs on all sides, set aside on a paper towel
Into a salad bowl, add the vinegar, mustard, salt and pepper, stir well, add the oil and stir again
Add all the vegetables and toss, if you find that the salad is too spicy, you can add 1tbsp. heavy cream
Serve Italian sausages meatballs on top of a bed of salad
Sprinkle some chives to decorate
